Grab your favorite jar of salsa, your favorite taco seasoning, and some chicken to make this easy, three-ingredient slow cooker dinner. Salsa chicken makes a delicious taco meat but is versatile enough to be used in all your favorite recipes.
Taco Night Every Night
How often do you find yourself eating tacos for dinner?
I keep corn tortillas on hand at all times because taco night comes around very frequently in our house. It's a simple and delicious meal that everybody enjoys.
Although we eat tacos all the time, I keep things exciting by making all kinds of different meats to put in our tacos. Salsa chicken is one of our favorites; it is flavorful and incredibly easy to make. With three ingredients that I always keep on hand and my trusty crock pot, we are on our way to one yummy taco night.
Our Favorite Taco Toppings
We also keep taco night exciting by changing our toppings. I usually pick items from at least a of few categories below to get the best all around flavor.
- Fresh: cilantro, other herbs, tomato, raw onion, fruit (pineapple, mango, etc.)
- Acidic: salsa, pickled red onions, lime or orange wedges
- Spicy: pickled jalapeños, thinly sliced serrano peppers, hot sauce
- Creamy: avocado, cheese, crema/sour cream, non-fat plain greek yogurt
- Other: fajita peppers & onions, sautéed mushrooms, whole or refried beans
Tacos with a vegetable make a healthy and complete meal. For extra protein, I like to use plain, non-fat greek yogurt in place of sour cream.
Scale It Up & Store It
If you like leftovers, love meal-prep recipes, or are feeding a large crowd, this recipe can easily be scaled up. The sky is the limit (or rather, the size of your slow cooker is).
This recipe keeps well in the fridge or freezer, so I tend to make Costco-sized batches using 4.5 lbs of chicken and a 38 oz jar of Kirkland Organic Salsa.
My favorite way to reheat salsa chicken is under the broiler in the oven. It takes about 10 minutes and helps the chicken get a little bit of browning on it for extra flavor.
More Ways to Eat Salsa Chicken
- Use as the meat for any nacho, enchilada, burrito, etc.
- Serve whole breasts over rice with a veggie on the side
- Put it on a salad (check out my bonus recipe below)
- Use it to make a Tex-Mex chicken salad
- Stuff it into your favorite roasted winter squash with cheese and quinoa
- Throw it in any recipe that needs cooked chicken

Slow Cooker Salsa Chicken
Ingredients
- 2-2.5 lbs Boneless, skinless chicken breast
- 16-24 oz Salsa
- Taco Seasoning to taste (try making your own)
Directions
- Pour salsa into the slow cooker, and use a little bit of cold water to rinse any salsa remaining in the jar. Dump the water into the slow cooker as well.
- Season to taste with taco seasoning.
- Add the chicken and cook for 6 hours on low (or 3 hours on high).
- Optional: use two forks to shred the cooked chicken.

Throughout this pregnancy, I have not been a lover of chicken nor have a been a lover of vegetables, but I am completely obsessed with this meal which contains both. So here is a bonus recipe for my addictive salad.
Enjoy!
- Salsa Chicken
- Lettuce (chopped)
- Tomato (diced)
- Cilantro (chopped)
- 1/2 Avocado, medium
- Juice of 1/4 lime
- Fresh lime wedges
- Plain, non-fat greek yogurt
- 2 Corn tortillas (quartered)
- Corn oil
- Chili Powder
- Salt
- Put lettuce, tomato, and avocado on your plate and squeeze a quarter of a lime over all of it. Sprinkle everything with salt
- In a skillet, heat a shallow pool of corn oil over medium-high heat. Once it is hot, fry the tortillas in the oil for a couple minutes per side or until browned. Work in batches.
- Remove the crispy tortillas from the oil, pat lightly with a paper towel to remove excess oil, and sprinkle with salt and chili powder while still hot.
- Add warm salsa chicken, crispy tortillas to the salad.
- Top with a dollop of yogurt, fresh cilantro, and more lime juice as desired.
