This simple tomato, basil, and garlic gnocchi dish can be ready to eat in less than 15 minutes. You can make this when you need a quick lunch for one or an easy side dish to go with dinner.
Finding Quick, Convenient, Healthy Meals
We all need them.
No matter how much I'd like to make everything from scratch, sometimes there is not enough time in the day. That's where a few quality, frozen foods come in handy.
I don't buy things in the freezer aisle all to often, but when I do, you'd better believe I am reading every label, scanning barcodes with my Yuka app, and doing all the things your average "scrunchy" mom does.
One product I have been happy with is the cauliflower gnocchi at Trader Joe's. It is gluten-free, contains just five (completely recognizable) ingredients, and it even has some fiber and micronutrients in it.
This frozen gnocchi gets my stamp of approval.
Fresh Ingredients
My husband and I love to garden because it allows us to cook with fresh ingredients throughout the summer and into the fall. We've had a very successful garden this summer. Even now, in September, I am harvesting green beans, tomatoes, basil, and other herbs.
And because my tomatoes and basil have been coming in so abundantly in the last few weeks, I'm using them in as many different meals as possible. Hence, the inspiration for this recipe.
Simple Meal or Side Dish
I made this as a quick lunch for one, but it could just as easily become a simple side dish with a protein of your choice. Since it only takes about 15 minutes from prep to plate, you can make this gnocchi any time.
The ingredients can easily be swapped and scaled up or down to meet your family's taste. Try this recipe next time you want to get dinner on the table quickly.

One Pan Gnocchi with Tomato, Basil, and Garlic
Ingredients
- 12 oz Frozen Gnocchi (I use Trader Joe's gluten-free cauliflower gnocchi)
- 1-2 cloves garlic (sliced as thinly as possible)
- Cherry tomatoes
- Fresh basil
- Olive Oil
- Salt
- Black Pepper
Directions
- Heat a pan over medium heat. Add 1-2 Tbsp of olive oil to cover the bottom of the pan, and let the oil get hot.
- Put thinly sliced garlic in the pan, and cook for a minute or two until fragrant.
- Then add the frozen gnocchi, stirring every couple of minutes
- After about 5 minutes, add the tomatoes, and sprinkle salt over everything. Continue stirring occasionally.
- When the tomatoes are just starting to pop, add the basil and toss the mixture to wilt it.
- Transfer everything to plates and top with black pepper.
