This quick, filling recipe is perfect for an easy meal at home or a delectable lunch prep. The olive oil and spices create a simple sauce for the noodles, chicken, and broccoli while the freshness of tomato, basil, and lemon juice bring the whole meal to life in about 10 minutes!

And the best part is that this recipe is totally adaptable to your preferences. I don't measure anything; instead, I just scale things up or down to meet my needs for the day whether that's a quick meal for me, packing lunch for my husband, etc.

 

Make this Meal in 10-Minutes

 The key to this 10-minute meal is preparation. A few quick steps will allow you to pull this meal together effortlessly at any time. 

  1.  I like to make this with leftover, shredded rotisserie chicken. I shred the chicken the day I buy it from the store, and then keep it ready to go in my fridge.
  2. The noodles can be made ahead, lightly oiled, and stored in the fridge until it's time to cook.
  3. Cut up tomatoes ahead of time and keep in the fridge or opt for smaller tomatoes that don't need to be chopped for a big burst of juicy goodness on your plate.

Quick Rotisserie Chicken Pasta Bowl

Fresh, 10 minute Chicken Pasta Bowl

Ingredients

  • Olive oil
  • Pasta noodles (cooked in salty water)
  • Rotisserie chicken (shredded)
  • Frozen broccoli
  • Tomato
  • Fresh Basil
  • Parmesan
  • Salt
  • Black Pepper
  • Lemon wedge (optional)

Directions

  1. Heat a pan over medium heat. Once it's hot, add enough olive oil to coat the bottom of the pan and let it heat up before adding the noodles, chicken broccoli, tomato, and basil. 
  2. Add parmesan, salt, pepper, and more oil to taste as all the ingredients heat up.
  3. Once everything is warm, top with more basil and fresh lemon juice and enjoy!
