Slow Cooker Meals

In the summer, I make crockpot dinners all the time to avoid standing over the hot stove. This Andouille Sausage & Shrimp Stew is a flavorful slow cooker meal that is perfect for dinner any night of the week. Serve this over a scoop of rice for a healthy meal with meat, veggies, and grains.

Leftovers

I made a big batch of stew so my husband and I could enjoy a couple meals and then put the other half of the stew in the freezer for after the baby comes. This could make a few dinners for a family of four (yay leftovers!), or you can easily cut the recipe in half to meet your needs.

Andouille Sausage & Shrimp Stew

Ingredients

  • 2 smoked andouille sausages (13-14 oz ea)
  • 2 lbs frozen, raw shrimp (can use peeled, deveined shrimp or shell-on shrimp)
  • 4 cans diced tomatoes (14.5 oz ea)
  • 16 oz frozen, sliced okra
  • 1 medium yellow onion, cut into 1/2" pieces
  • 1 green bell pepper, cut into 1/2" pieces
  • 3 stalks of celery, cut in thick pieces
  • 3 Tbsp cajun seasoning
  • 1 Tbsp dried, minced garlic
  • Salt
  • Black Pepper
  • Celery Salt or Celery Powder

Directions

  1. Add chopped onion, peppers, and celery to the slow cooker. Add the diced tomatoes, and use a small amount of water to rinse the remaining tomato juice from the cans. Pour that into the slow cooker as well.
  2. Add all the seasonings and adjust to taste.
  3. Slice sausages diagonally in thick pieces (I cut them about 1" thick), and put them in the crockpot.
  4. Cook on low for 5-6 hours or high for 2-3 hours.
  5. If using peeled, deveined shrimp, add the shrimp and okra to the slow cooker and mix. Cook on high for roughly 15 minutes or until the shrimp are cooked through. (see note below for shell-on shrimp)
  6. Serve hot over a seasoned rice of your choice, and enjoy!

 

Note: If using shell-on shrimp, add just the shrimp to the slow cooker at first and mix. Cook on high for about 15 minutes before adding and stirring in the okra. Cook for another 15-20 minutes or until the shrimp is cooked through.
